I used masala spices from Jonnie Boer, available in many supermarkets in the Netherlands. I tried the Garam Masala spices, which is a blend with spices like: cumin and cardamom. This is perfect for Indian dishes with fish, chicken and vegetables. It’s smells só goood! I wanted to make a vegetarian dish, but this works perfectly with chicken too!
Ingredients (2 persons)
200 gr pumpkin or chicken
150 gr basmati rice
100 gr tomato pulp
70 gr yoghurt
4 tl masala spice
1 onion
1/2 garlic clove
2 tl sugar
sesame seeds
coriander (if you like)
This is how you do it ►
Preheat the oven at 200 degrees. Cut the pumpkin/chicken in cubes and chop the onion and garlic. Bake the pumpkin, onions and garlic in a pan (with a pinch of masala spices) for about 3 minutes and start with the masala sauce. Mix the yoghurt, tomato pulp, masala spices and sugar in a ovendish.
Add pumpkin mixture to the masala sauce, and put in the oven for 20 minutes. Boil water for the basmati rice, and cook for 10-12 minutes. Before serving add some sesame seeds tot the rice. Garnish the pumpkin masala with coriander and sesame seeds.
