Stoofperen is a typical dutch dish, which I only eat during christmas. The translation is stewed pears, mostly eaten as a dessert. My grandmoms are the best stoofperen makers and I want to learn it. Together with my grandmother I made these delicious stoofperen and it was surprisingly easy!
Ingredients
2 kilograms pears (specifically for stewing)
500 ml red wine (of your choice)
4 cinnamon sticks
6 ts sugar
* you could also use mulled wine (glühwein), then you don’t have to add 4 cinnamon sticks.
For me it is a tradition to eat stoofperen, I also refuse to write stewed pears haha.
The pears are almost drowning in wine.
Steps ►
Peel the pears and cut into quarters, put it in a pan. Add the red wine and 4 cinnamon sticks, the pears need to be almost under. I used a bottle of Merlot. You can add more wine or water if there’s not enough liquid. Get the lid on the pan and bring to boil. When boiling, reduce the heat, let the pears simmer gently red with the lid on. After an hour, add 4 teaspoons of suger. Make sure you don’t add too much at once, when the sauce is hot you taste more acinity than sweetness. But when it’s cooled down, you taste the sweetness better than the acid of the wine. The danger is that you add too much sugar to the hot (acid) red wine, don’t forget that the pears are also sweet. After 1,5 hour I tasted the broth and added 2 more teaspoons of sugar. The pears need about 2 hours to get soft and red. Your stoofperen are red and ready!
